For the Vorarlberger Küchli, work all the ingredients in the order given to make a silky smooth dough and leave to rest in a warm place for at least half an hour.

Then roll out and cut into even squares. Make two small cuts in the middle of the dough and bake the Küchli in hot lard until light yellow.
