For the sunken rhubarb cake, peel the rhubarb and cut into small strips. Melt the chocolate. Cream together the butter, sugar, salt and orange zest. Stir in the eggs one at a time, mixing for a minute after each egg. Add the chocolate and orange juice. Combine the flour and baking powder and sift over the top, folding well.

Grease a small loaf pan/springform pan and pour in the batter. Cover with the rhubarb and bake at 190 °C in a preheated oven on the middle shelf for 20 minutes.

Sprinkle the grated chocolate over the cake and bake for another 15-20 minutes. Let cool and sprinkle the sunken rhubarb cake with powdered sugar.

Preparation Tip:

You can also prepare the sunken cake with other fruits. Personally, I have already baked it with pears and raspberries.
