For the sponge cakes, beat the eggs with the cold water and honey for about 5 min. with a food processor until foamy, letting the lemon juice trickle in drop by drop.

Sift flour onto this foamy mixture and fold in very carefully. Spread this mixture on a baking sheet cut in half lengthwise. I always put a sheet of baking paper on the baking sheet, bend it up right and left and put an empty loaf pan on each side.

In this way you get a large rectangular surface. Bake the dough at 180 degrees for about 12 to 15 minutes, remove from the oven and let it cool.

Whip the cream with vanilla sugar, powdered sugar and starch until stiff. Cut the sponge cake in half lengthwise, fill with whipped cream and cover with the second sponge cake.

Leave in the refrigerator for about 1 hour and then divide into pieces.
