For the spicy farmhouse bread, dissolve the sourdough in half a liter of lukewarm water and stir in the rye flour (preferably freshly ground). Cover and let ferment in the oven at about 30 °C for at least 1 hour.

Mix the remaining rye and wheat flour in a bowl with the spices. Make a well in the center of the flour, add the pre-dough and mix everything together.

Add lukewarm water and knead the dough vigorously, for at least 15 minutes, until the dough comes away from the bowl. Sprinkle dough with whole wheat flour and let rise covered in a warm place (oven 30 °C) for about 2 hours.

When the dough has increased in size by about half and small cracks appear on the surface, knead well again on floured work surface.

Then form a ball and place it in the baking pan with the end of the dough facing down.

Cut a cross in the middle with a small knife and let rise covered for another 45-60 minutes at constant heat. Sprinkle with the remaining caraway seeds.

If the dough has increased in size and small cracks again appear on the surface, you can bake the bread. Spray the bread in the pan with a little water beforehand.

The baking time in the Philips Airfryer hot air fryer is 10 minutes at 200 °C, then about 25 minutes at 180 °C.

Take out the spicy farmer’s bread and immediately spray it with a little cold water. Put it on a grid and let it cool down.
