Pork Fricandeau with Passion Fruit Sauce

For the pork fricandeau, cut two passion fruits in half, scoop out the pulp and place in a small bowl, stirring to combine.

Cut 4 passion fruits almost in half (leaving cut halves with about 1 cm of each other.) Scoop out pulp and pass through a sieve into a bowl. Keep the empty fruit.

Add 2 tbsp juice, 75 gr butter, salt and pepper to the bowl and stir well. Meanwhile, fill 1 half of the fruit with passion fruit butter and the other half with the pulp. Place the two halves in the refrigerator. Put the rest of the juice in a measuring cup and fill it up to 1 dl with the juice from the bag.

Rub the meat with salt, pepper and ginger powder. In a frying pan, heat about 75 gr of butter and fry the meat for about 10 minutes until brown on all sides. Let it fry for another 30 minutes until it is done. Turn the meat from time to time.

Mix the cornstarch with 2 tablespoons of water to a smooth paste. Remove the meat from the pan and add 5 tablespoons of water to the broth. Add the passion fruit juice and heat the sauce, stirring constantly.

Strain the resulting juice and return it to the pan. Add the cornstarch as well and stir it all together to make a lightly thickened sauce.

Cut the meat into thin slices and arrange on plates, baked.
