Instructions:

Cut the baskets 1. with a sharp knife about 10-12 circular pieces of about 16 cm ø from the banana leaves. Tip: Use a saucer as a template. 2.

2. 2 of each of the circular banana leaves are placed on top of each other to cover and formed into baskets.

3. while holding the leaves in your right hand, grasp a third of the circle with the thumb and index finger of your left hand and fold the leaves towards the center. This automatically creates the first corner of the basket. 4.

4. Now attach the layers of overlapping leaves to the upper edge. This can be done with half a wooden stick, needle and cotton thread or, as is quite common in Thailand, with an office stapler. Repeat this process until the basket is finished with the 4 corners.

The filling 1. Cut the chicken fillet into pieces of about 1cm#.

2. Set aside 1/4 of the firmer part of the coconut milk. Mix the rest of the coconut milk with the egg as well as the fish sauce.

3. add the cilantro chopped and the meat cubes with some basil leaves. These can be chopped as well. Mix everything well.

4. place 4-5 basil leaves on the bottom of each of the baskets.

5. now add the filling to the baskets. They should be 2/3 full.

6. cover the filling with 3 basil leaves.
