Remove the rind from the cheese, if necessary, and cut it into evenly narrow slices, placing them on the plates in as many different ways as possible. Put two small sprigs of rosemary on each.

Place in the hot stove top heat and wait until the cheese has melted. Pour a little olive oil and season with freshly ground pepper from the mill. Sprinkle with chives and serve with cooked, peeled potatoes. It also goes well with farmhouse bread or white bread! :
