For the gooseberry jelly, first wash the gooseberries, drain and halve them. Bring them to the boil in a saucepan with the water and the juice of one lemon and simmer with the lid closed for about 20 minutes until soft.

Then strain the berries, collecting the juice.

For the jelly, first weigh out the juice and mix it with the same amount of sugar in the saucepan. Bring the mixture to the boil without the lid and then reduce the temperature. Skim off any foam that forms.

After 20 minutes, do the first jelly test. The jelly is cooked when a solid film forms.

Now remove the saucepan from the heat and add most of the mint and let it steep for a while.

In the meantime, chop the remaining mint and sage leaves, mix into the gooseberry jelly and fill into jars and seal well.
