Cut game meat including bones into pieces, boil with greens cut into leaves, bay leaf, juniper berries and peppercorns in plenty of water until soft. Prepare a roux with butter, flour and onion and stir into the soup. Season with red wine, paprika, bell pepper, salt and some lemon juice and refine with sour cream.
