Fruit cream:

Instructions:

The simplest Flammeri consists of milk, sugar and starch flour Gustin, Maizena). Mix the cornflour with a part of the cold milk until smooth, while bringing the rest of the liquid to the boil. Then add the starch flour, stirring continuously, and let it boil for 4-5 minutes. Rinse one bowl with cold water and pour in the flummery. Leave to set for several hours, preferably overnight. Before inverting, gently loosen the edges of the custard with the tip of a kitchen knife, gently shake the mold back and forth and invert the flummery onto a glass plate. Serve with fruit juice.

The quantity can be refined by adding lemon juice and butter or by boiling vanilla in milk.

Mixed flummeries: look very nice. Fill half of the flummery with fruit, let it cool and put milk or cream flummery on top. You can also alternate milk and caramel flummery, milk and chocolate flummery, milk and coffee flummery or coffee and chocolate flummery. It looks nice if you lift out individual pieces from the initially filled, solidified amount, so that a pattern is created. It is also possible to start with a jelly mass made of fruit juice, pulp or wine. For the liquid, dissolve the gelatine in a little reserved heated juice and mix it with the sugar.
