** Dough: Make a pasta dough from the ingredients listed. Cut about a third of the dough into small pieces and wrap it in plastic wrap and use it for the fazzoletti one day later. After resting, roll out the other part of the dough thinly and cut out squares with sides about 8 cm long.

** Sauce: cut the young onion into rings. Crush the garlic clove and rinse and clean the chanterelles. Heat the butter, sauté the spring onions in it, add the garlic and the chanterelles and sauté for about 4-5 minutes while stirring.
