In a greased gratin dish, place the pieces of fish and brush with 2 tbsp. butter. Sprinkle with salt and pepper. Put the dish in the oven heated to 180 degrees for 20 minutes, until the fish is easy to pick apart.

Heat the remaining butter and cook onions over low heat until translucent, add orange zest and extinguish with cognac. Simmer everything together for about 10 minutes until lightly cooked. Add the whipped cream and simmer until the sauce is creamy. Then mix in the orange juice. Pour the sauce over the fish. Sprinkle parsley on top. Decorate with orange slices.
