For the belugaline salad, place lentils with water in an unperforated container. Peel the yellow beets and place them in a perforated steamer container. Steam both together at 100° C for about 25 minutes (depending on the size of the beets, remove them from the steamer after about 20 minutes).

Let the lentils steam out briefly, cut the yellow beets into small cubes, clean the spring onion and cut into rings. Mix everything and season with salt, pepper, olive oil and good balsamic vinegar.

Leave to infuse in the refrigerator for at least 20 minutes and then serve the finished belugaline salad room-warm.
