For the apricot flash dessert, wash, pit and quarter half of the apricots. The second half also wash, core and cut into fine strips.

In a stand mixer, puree the quartered apricots together with some lemon juice. Add the curd cheese, yogurt, sugar and vanilla sugar and mix.

Whip the cream until stiff and fold into the mixture.

Arrange the cream in a nice dessert glass, decorate with the apricot strips and chocolate shavings and serve the apricot flash dessert.

Preparation Tip:

This apricot flash dessert is super quick to make and tastes simply delicious. If you don't like chocolate shavings, you can also sprinkle grated nuts or almonds on top.
