Instructions:

In a baking bowl, mix the flour with the yeast powder. Add the curd, fat, salt, water and buckwheat meal. Mix everything with the dough hook of the hand mixer to a smooth dough. Now shape onto the surface and knead with your hands for 4 minutes. Knead vigorously.

Preheat the oven to 75 °C. Grease the baking tray or cover with parchment paper if necessary. Shape the dough into rolls with floured hands and place them on the baking tray. Score the surface crosswise. Mix the egg yolks and milk and brush the rolls with the mixture.

Put the rolls in the middle rack of the oven and let the dough rise for about 10 minutes. Then turn up the heat to 200 °C and bake the rolls for 20-25 minutes. Place on cooling rack and cool.
