For the seitan curry, cut seitan and mango into bite-sized pieces. Squeeze lemon.
Fry seitan pieces in hot oil until brown all over. Briefly fry the curry powder and pour in the coconut milk. Add salt and simmer for 5 minutes.
Add mango pieces and lemon juice and simmer for another 5 minutes. Season the seitan curry with salt.
