For the beef soup, heat oil in a 7 liter pot, add meat and bones, pour 5 liters of water and add all other ingredients.

Bring to a boil, cover and simmer on low heat for two hours. Then the soup is ready. The greens are also completely cooked and can be discarded or used for other purposes.

Pour the soup through a fine sieve. Remove the heart, liver and soup meat, chop them and add them back to the soup.

Season the soup to taste.
