A great cake recipe for any occasion:
(*) Frittata di cipole: cold onion omelet eaten as an entrée.
(**) Red onions because they have a mild savory taste.
Remove the skin from the onions, cut them in half and cut them into strips.
Heat the oil in a frying pan, add the onions and fry them, stirring occasionally, until they are translucent. Attention: they must not turn brown ! Season with salt and pepper.
Stir the eggs with water, season with salt and season with pepper.
Add butter to the onions and pour the egg mixture. Cook at a very low temperature, with the lid closed, until the omelet does not brown on the bottom !
Slide onto a plate and cool. Cut into pieces on it like a cake and bring to the table as an entrée.
Frittata di cipole can also be used as a sandwich filling.
