Horseradish butter:
Mix horseradish with butter and salt.
Suitable with: Fried and grilled fish, meat.
Spicy parsley butter:
Juice of one lemon, salt, parsley and pepper mixed with butter until smooth.
Suitable with: soups and fish, sauces, shellfish, poultry, meat, as well as slices with egg, smoked salmon, tomato sausage and roast meat.
Green pepper butter:
Mix meat extract, juice of one lemon, shallots, peppercorns, salt with butter.
Suitable with: grilled meat and sauces.
Red wine butter:
Reduce shallots and red wine, cool and blend butter in it until smooth. Season with juice of one lemon, salt, meat extract and pepper.
Suitable with: fish, meat, sauces, chicory, artichoke hearts, celery, cuts with fish and roasts.
Our tip: Use sweet red wine for a sweet note and rather dry wine for flavorful, spicy dishes.
