For the potato dumplings first cook the potatoes with the skin. Drain, peel and press through a press while still hot.

Knead on a floured work surface with the remaining ingredients. Form a roll and let rest covered at room temperature for about 1/2 hour.

Cut equal-sized pieces from the roll and shape into dumplings.

In a large pot, bring water to a boil and add salt. Add in the dumplings and simmer gently for about 15-20 minutes. Serve the potato dumplings.
