For the beetle bean salad, soak the beetle beans in a bowl of water for 6 hours, or overnight. Then boil the beans in salted water for about 40-60 minutes until tender.
Slice the onion into thin slices, or slice very thinly. Mix the cooled beans with onion, salt, oil and apple cider vinegar.
Preparation Tip:
Freshly baked bread goes especially well with beetle bean salad. Who would like to supplement it with feta cheese, etc..
