For the warm avocado salad, rinse and dry shrimp.

Cut avocado in half, pit, peel off skin and cut flesh into cubes. Immediately mix avocado cubes with lemon juice.

Wash lettuce leaves and shake dry. Wash arugula and cut into strips. Carefully fry cashews in a dry pan until brown and set aside to cool.

Heat olive oil in pan and fry shrimp briefly. Squeeze garlic into it and fry briefly. Mix the hot shrimp, cashews and arugula with the avocado cubes and season with salt.

Arrange the warm avocado salad on the lettuce leaves and sprinkle with the chopped parsley.
