Peel one ripe papaya, cut in half, remove seeds. Cut halves lengthwise into four wedges, drizzle with lime or lemon juice, season lightly with salt and pepper. Wrap with Parma or other air-dried ham slices. Peel one banana and cut into thick slices. Thread onto papaya boats with skewers and sprinkle coarsely ground green pepper on top. Tip: Instead of papaya, you can also use honeydew, galia or ogen melon.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
