For the banana-peanut waffles, put all the dry ingredients in the stand mixer and mix until everything is finely ground.

Peel banana, mash finely with a fork and mix with the maple syrup, water, lemon juice and peanut butter. Slowly add mixture to dry ingredients and mix with hand mixer. Add more water if needed and season with maple syrup.

Let dough rest for 10 minutes. Meanwhile, preheat waffle irons and grease if necessary.
