For the crumpets, mix flour, baking powder, salt and sugar. Mix oil or butter with the eggs, buttermilk and milk well and add to the flour to make a smooth batter.
Heat the oil in a frying pan. Pour in 2- 3 tablespoons of the batter at a time and bake the crumpets until golden brown on both sides.
Preparation Tip:
Serve the crumpets with fresh berries, maple syrup or honey.
