For the pizza style steaks, first wash the minute steaks, pat dry with paper towels. Salt and pepper.
Heat oil in a good frying pan (stainless steel, coated – we’ve had a titanium pan for ages, everything fried turns out perfect), add the meat only when it sizzles in the oil. Sear hotly, turn after 2-3 minutes, sear the other side briefly as well.
Reduce heat to half. Sprinkle meat with a little oregano, top each with a slice of tomato and a slice of mozzarella. Put lid on pan, continue to sear meat at half heat for about 5 minutes until cheese is melted. Serve the minute steaks garnished with fresh basil on preheated plates. Accompanied by green salad and prepared with “mozzarella light”, pizza-style steaks are a wonderfully light, quick meal.
