Mix both types of flour, vanilla sugar and salt in a bowl. Add the almond drink and stir until a creamy dough is formed. Let the dough rest for about 30 minutes.
Heat a large skillet and add a tablespoon of coconut oil. Bake three small pancakes. Using the remaining batter, bake three more pancakes twice.
Drain the cherries and serve with the pancakes.

Instead of compote cherries, you can add fresh fruit or maple syrup, chocolate sauce, etc.
