Try this delicious noodle dish:

Soak the glass noodles in hot water for a few min.

Drain the glass noodles on a sieve, chop them a little bit with scissors and put them into a big bowl.

Add the noodles, diced tomatoes, onion rings, peanuts, shrimps, half of the chopped coriander leaves, squeeze the garlic and mix well. Season with juice of one lemon, sugar, sesame oil and chili seasoning.

Finely dice tuna and mix with onion and mango cubes. Halve and pit avocado, finely dice flesh and add. Season lime juice with salt and pepper, beat with olive oil, stir in remaining chopped cilantro leaves and pour over tuna mixture. Steep for about fifteen minutes.

Arrange glass noodle salad and tuna tartare side by side on plates.
