Halve or quarter the mushrooms according to size. Pluck rosemary needles from the branches. Heat oil in a casserole. Sear the meat in it. Add bay leaf, villi, rosemary, juniper berries and mushrooms and sauté. Season with salt and pepper. Add paradeis pulp and sauté. Extinguish with clear soup, stock and red wine. Bring to a boil and simmer with lid on over medium heat for about 1 1/2 hours. Cut carrots into slices. Add carrots to goulash about 15 minutes before end of braising time. Chop parsley. Stir whipped cream and cranberries into the goulash and let it boil briefly. Add sauce thickener and let it boil up again. Season with salt, pepper and sugar. Cook dumplings according to instructions, sprinkle with parsley and bring to the table.

Our tip: Use sweet red wine for a sweet note and rather dry wine for flavorful, spicy dishes.
