For the spinach soup, wash the spinach well and remove hard stems. Squeeze well and then chop coarsely. Melt the butter in a large saucepan and saute the spinach in it, stirring until soft.
Then remove the spinach from the heat and allow to cool slightly. Puree the spinach in a blender and then put it in a pot with the vegetable soup and the whipped cream.
Season with salt and pepper and heat slowly. To serve, put a dollop of sour cream on the spinach soup.
Preparation Tip:
If you want to make the soup a little leaner, you can use sour cream instead of the whipped cream. However, do not heat the spinach soup after stirring it in, otherwise the sour cream will flocculate.
