Instructions:

For potatoes coated in salt, beat egg whites until light and creamy and stir into sea salt with a dash of water.

Preheat oven to 200° Celsius.

Cover a baking tray with parchment paper. Spread half of the sea salt and place the potatoes in the center.

Wash and dry the rosemary and add it. Cover with the remaining sea salt so that neither potatoes nor rosemary are visible. Bake in the oven for seventy-five minutes.

Reduce the heat to 60° Celsius and steam the potatoes for another fifty minutes.

Remove the firm sea salt crust from the potatoes in the salt coat with a kitchen knife.
