Try this delicious pasta dish:

Place the egg noodles in a large bowl. Pour enough boiling hot water over them. Set aside for 10 min.

In the meantime, remove the skin from the chicken thighs.

Cut the chicken meat into small pieces with a sharp knife.

Heat the peanut oil to very hot in a large preheated wok or skillet, tossing gently.

Add the meat and carrots to the wok or possibly skillet and sauté for about 5 min.

Drain the noodles thoroughly. Add the noodles to the wok or frying pan and fry for 2-3 min until hot.

Whisk together the oyster sauce, eggs and 3 tbsp cold water. Pour the mixture over the noodles and fry for another 2-3 min until the eggs are set.

Transfer everything in the wok to preheated serving plates or cups and bring to the table.

Add the hoisin sauce instead of the oyster sauce.
